Ingredients
- 40g Misty Gully Paella Seasoning
- 300g paella rice (or risotto rice)
- 200g chicken fillet, diced
- 1 chorizo sausage, sliced
- Seafood of your choice (prawns, mussels, calamari, scallops or firm white fish)
- ½ tin (200g) crushed or chopped tomatoes
- 1 capsicum, diced
- 2 cloves garlic, minced
- 1 litre boiling water
- 1 tablespoon olive oil
Method
- Cook the Chorizo
Heat your paella pan or cast iron pot over medium heat. Add the sliced chorizo and cook until lightly browned and the delicious smoky oils have been released. Remove from the pan and set aside. - Sauté the Vegetables
Add the olive oil to the same pan, followed by the minced garlic. Sauté briefly until fragrant, then add the diced capsicum. Cook for 2–3 minutes until slightly softened. - Brown the Chicken
Add the diced chicken to the pan and cook until lightly browned on all sides. It will finish cooking as the paella simmers. - Prepare the Paella Broth
In a separate jug, combine 40g of Misty Gully Paella Seasoning with 1 litre of boiling water. Stir well until the seasoning is evenly dispersed, creating a rich, flavour-packed broth. - Step heading Add the Rice
Add the rice directly to the pan with the chicken and vegetables. Stir gently for approximately 1 minute, ensuring the grains are well coated in the flavoursome oils. - Add the Broth & Tomatoes
Pour the prepared paella broth over the rice, then add the crushed tomatoes and return the cooked chorizo to the pan. Give everything a gentle stir to distribute the ingredients evenly. - Let It Simmer
Reduce the heat to a gentle simmer and cook uncovered for approximately 10 minutes. Avoid stirring from this point onwards. Allowing the rice to cook undisturbed helps develop the delicious, slightly crispy base that makes a great paella. - Add the Seafood
Arrange your chosen seafood evenly over the top of the rice, gently pressing larger pieces into the mixture. Continue simmering for another 10 minutes, or until the rice is tender, the chicken is cooked through and the seafood is fully cooked. Turn prawns if necessary to ensure even cooking. - Check & Serve
Check the rice for doneness. If it needs a little longer, add a splash of hot water or additional prepared broth and continue cooking until tender. Once cooked, remove the pan from the heat and allow the paella to rest for a few minutes before serving. Serve straight from the pan and enjoy!
