Outback Campfire Trail Dust OUTBACK CAMPFIRE TRAIL DUST – RECIPE IDEAS AND TIPS Stuffed capsicums Serves 4 This bold, smoky dish can be cooked in the oven or on a grill for that campfire-inspired taste. Shopping List 4 large capsicums 450g ground beef or lamb (you can substitue with chicken or a vegetarian option like lentils) 1 onion, finely chopped 2 cloves garlic, minced 1 cup cooked rice (white, brown or basmati) 1 can diced tomatoes (400g) 1 tablespoon olive oil 1 tablespoon outback campfire trail dust 1 cup shredded cheese Method Preheat oven to 190 degrees celsuis slice the tops off the capsicums and carefully remove the seeds and membranes. In a large skillet, heat the olive oil over a medium heat. Add chopped onion and garlic and saute. add ground beef or kamb and cook, breaking it apart, until browned. stir in the diced tomates, cooked rice and sprinkle with outback campfire trail dust. Simmer for 5-7 minutes then remove from heat. Spoon the mince/rice mixutre into each capsicum, packing it down slighlty to ensure they are full. Top with cheese. Place on a baking tray and cover loosely with foil. Bake for about 30-35 minutes or until tender. Remove foild and bake for a further 5 minutes to melt cheese.
